Croffles in Krabi: when a croissant meets a waffle

Take laminated croissant dough, press it in a hot waffle iron, and the surface caramelises into a shattering crust while the inside stays layered and buttery. That's a croffle — the croissant-waffle hybrid that took over cafes in Korea, and still an unusual find in Krabi.

Ours come in four versions, each topped to order: Oreo (169฿), Mango (159฿), Banana Choco (149฿) and Nutty Choco (149฿). Warm, crisp and just the right size to justify alongside a real meal — plenty of guests order one as dessert after a brunch plate.

We're in Ao Nang — inside Ao Nang Landmark (Sealay Village) in Khlong Haeng, a 5-minute walk from Nopparat Thara Beach and about 10 minutes by car from central Ao Nang Beach, with parking on site. The three get confused, so here's the clean split. A croissant is laminated dough baked free-form — all flake, no grid. A waffle is a pourable batter set in an iron — all grid, no layers. The croffle cheats: croissant dough pressed in the waffle iron, so the butter layers survive while the iron caramelises the outside into deep pockets that hold toppings the way a croissant never could. You get the crunch of a waffle's ridges with the pull of a croissant's crumb.

It matters for ordering, too. Because the dough is already rich and slightly sweet, a croffle doesn't need the syrup-flood treatment a waffle begs for — ours are topped to order and stop while they're ahead.
